Exploring the Hedgehog Mushroom

Commonly known as the Sweet Tooth, Pig's Trotter, Wood Hedgehog, or Hedgehog Mushroom, this fungus is part of the family Hydnaceae. This fascinating mushroom is characterized by its spore-bearing structures in the form of spines rather than gills, hanging down from the underside of the cap. The cap is dry, ranging in color from yellow to light orange to brown, and often develops an irregular shape, especially when growing closely with adjacent fruit bodies. The mushroom’s tissue is white with a pleasant odor and a spicy or bitter taste, turning orange with age or when bruised.

Description and Ecology

Hydnum repandum is a mycorrhizal fungus (meaning it grows on other plants), broadly distributed in Europe, where it grows singly or in close groups in coniferous or deciduous woodland. It is considered a choice edible species, although mature specimens can develop a bitter taste. The cap of the hedgehog mushroom can be up to quite wide, and the spore print is pale cream. The underside is densely covered with small, slender whitish spines measuring. The stipe (or stem), typically short and relatively slender, is either white or the same color as the cap and is sometimes off-center. The flesh is thick, white, firm, and bruises yellow to orange-brown.
